If you like your meat to taste like grease and smoke I guess.....I was NOT impressed eating at the "Best Texas BBQ in San Antonio" when I went to visit my son.

For proper Texas BBQ its going to Lockhart or Franklin's in Austin or GTFO.

If you're ever in Tempe, Little Miss BBQ is about the best Texas style BBQ you'll find outside of Texas.

Couldn't get my hands on Franklins but did get Snows BBQ and was blown away. And yes I enjoy smoke and grease as those are pivotal to good BBQ.

If I can't tell the difference between the cuts of meat because they all taste like the same smoke and grease, then it's a far bit too pivotal in that Q imo. There's a distinct flavor difference between a Brisket and a Tbone and one should be able to get that from well-prepared Q.

If he is able to fit in, to ignore the NY media and to apply himself in a new system I think he earns respect. That being said, I think there is a good chance that if things don't work out exactly right that he starts to just mail it in.
