For some perspective, it happened in the Dynasty years also. Half the NFL seemed to have coaches from Bill's coaching tree when Bill retired from the NFL. Key to any organization is to continue to find diamonds in the rough and find good people that others have overlooked. It's dirty, grinding, grunt work, but it's really the only way to stay ahead of the competition. Peters is going to be a loss, but there's a lot of competent guys left who have the talent to find the next Adam Peters 2.0 (or so I hope). As long as ShanaLynch keep getting to the NFCCG and Superbowl, this stuff is just going to keep happening. Might as well get used to it and prepare for it ahead of time.
As you said, there are a lot. Matt Nagy, Doug Pederson, and Eric Bienemy are recent ones. Also, Sean McDermott and John Harbaugh spent some time with Big Red. There are others but those are all I can recall.
