They aren't going to give Trey the starting job until he's unquestionably ready. He's not starting week 1. Once live bullets start flying, and it turns out hes not quite ready for the speed of the game, our options are either to let him flounder and lose our chances at a SB run for his development, or sheepishly put Garoppolo back in and look like idiots for jumping the gun.
He will be eased in with play packages. Once we see enough in those scenarios to deem that hes our best QB, then Jimmy will be traded and he'll be made the starter.

2) Who cares? Do you really think KS et. al. are sitting around worried about what other people may think of their decision(s)? Trey will play when the coaches feel he is ready, gives the team the best chance to win, etc. If they are wrong, so be it. Their bed has already been made. They can't return Trey and get their draft picks back.
As for Jimmy's trade value, someone posted an article a few weeks ago that said interest in Jimmy was lukewarm. That a 6th round pick is about all they could get for Jimmy. Now, I do not know whether that article had any merit, but Jimmy's trade value isn't going to be worth anything substantial unless he balls out this year, or another team suffers a major injury to their QB1--and can afford to take on Jimmy. Both of those scenarios are possible, but ultimately unlikely. Which is why I think Trey starts sooner, rather than later.
And your last sentence basically confirms Jimmy's lack of trade value. If, at some point during the season, Trey surpasses Jimmy, other NFL teams aren't going to look at Jimmy as some sort of savior. He will be a vet, who was just replaced by a kid who has only been allowed to purchase alcohol legally in CA for three months.
