Contracts don't just disappear unless both sides want them to. No reason for the Gophers to allow it to lapse without significant compensation.
The answer to your question is 18 years in college and NFL. And DeBartolo approached him to become the OC. It was somewhat of a shambles that led to him being jumped into the head coaching role and in view of his record there and in particular in the playoffs, I doubt they would do it again.

Those guys leave because they aren't play callers and go with go guys like Ryan to have full control to get a head coaching job.

Just go to any team with an offensive head coach calling his own plays. Brian Callahan or Kevin O'Connell are examples. Cameron Turner QB coach AZ or Bills QB coach Ken Dorsey could work as well.
