What did he do to earn the title and/or what was his background that he was deemed assistant head coach worthy?
What does "assistant head coach" do?
Keep an eye on the play clock or potential replay challenges?
I thought that title was usually used to keep another team from poaching them at the same level coaching

Assistant head coach is a honorary title for experienced assistants, usually those with some prior high level coaching experience. Embree had been a head coach at Colorado previously. The coaches with that designation tend to be among the most highly paid assistants.

My assumption is that Demeco will get more money for staying and that Jed has a self-imposed salary cap for coaches. So Embree money goes to Demeco.

His contract was up, and they wanted to move on. Thats business. Are the 49ers obligated to stick with everyone? They might want a guy like Rich Bisaccia to be ST coach, and they have to pay him like an assistant HC to get the deal done. Its not personal, and its not "a bad look". Its reality. Its how you improve your team.

If he was getting Assistant HC money, then the request for pay cut makes since because he probably want doing anything in regards to making Kyle's job easier. So, they were probably like, since you are technically just doing TE coach tasks, we need to pay accordingly.
