I always saw him as a dirty work kind of guy. Like he's really good at clogging up lineman for the linebackers to make plays. Hard to move in the run game etc. he is an armstead type to me (different styles, of course). Just a lot of dirty work that kind of goes unnoticed because it doesn't really show up on a stat sheet.
But you're right, he hasn't been healthy in quite some time.

I haven't followed the cowboys much at all this year but I did hear that he was a good corner for covering tight ends. I think their backup is like a 12 year vet or something. I forget his name - I think he used to be a Viking.

is this what you saw? At the 28 min mark he says that they'll have to do without Peters and Kearse but I didn't hear him say that he is 100% out. Might be different

NO. Much of that is cleaned up. You can still get him at times but just doing a double move and automatically 100% beating him is not the case this season.
