HOw many times do they get to set it on the ground and kick-roll it back to their teamates before they have to kick it to the other team?

They get 6 tackles then have to turn the ball over to the other side. Usually they kick on the 5th tackle. Sometimes ealier.

So the dude running with it can't just pitch it around to his teammates as much as they want? I saw a couple guys do it, but they aren't all doing it.

5 times. If they get caught with it on the 5th time, it's an automatic turnover. In some cases they get 6 goes, which is a new rule this year. If the ball is kicked and it goes over the last line on the field, or the "dead ball line" then they get 6.

2 points for a penalty goal kick, 4 points for a touchdown 2 for a conversion kick and 1 point for a field goal kick...

They can, but like NFL, ball security is paramount. You'll probably see some loose passes through the game.

They can. As you just saw.

But they sometimes just send their 'forwards' straight up a few times. Get the defence tired and on the back foot then they'll maybe pass the ball a few times.

It was a penalty kick because when you tackle you need to clear the ruck so they can resume play.. He was trying to slow the game down too much and layed on the player after tackle so cost him a penalty.
